SEASONED BUTTER MILK(Majjiga charu)

INGREDIENTS    :
Butter milk           :2 cups
cumin           :1/2 tsp
mustard seeds   :1/2 tsp
turmeric powder   :a pinch
salt                        :as needed
dry red chillies      :2
green chillies         :2
onion                      :1(finely chopped)
urad dal                  :1 tsp
curry leaves            :a few
oil                            :1 tsp
garlic                       :2

METHOD :

Take butter milk in a bowl.Add chopped onion,salt to the butter milk and mix well.
Heat oil in a pan,add cumin,mustard seeds,dry red chillies,green chillies,urad dal,turmeric powder,curry leaves,crushed garlic,hing and turn off the heat.
Add this seasoning to the butter milk and mix well all together and adjust salt according to the taste.
Serve with rice.

RAITA

INGREDIENTS  :
Yoghurt   : 1 cup
salt           : to taste
carrot        :half
cabbage    : small amount
onion         :half
green chilli :half
coriander leaves   : a few


METHOD   :
Take yoghurt  in a bowl add salt,finely chopped onion,cabbage,carrot,green chilli.
Spread coriander leaves on top of it.
Raita is ready serve with rice or biryani.

SNAKE GOURD PERUGU CHUTNEY(POTLAKAYA PERUGU CHUTNEY)

INGREDIENTS :
Potlakaya(snake gourd)  : 1
cumin              : 1/2 tsp
oil                    :2 tsp
salt                   : to taste
mustard seeds   : 1/2 tsp
ginger                : small piece
onion               :1
turmeric           : a pinch
dry red chillies : 2
yoghurt             : 1 cup
METHOD  :
Cook snake gourd pieces in water for 10 mins and strain them.
Take a pan add oil in it add cumin,mustard,dry red chillies,turmeric,ginger.
Add snake gourd pieces,tadka,onions to the yoghurt.
Perugu chutney is ready.
