INGREDIENTS :
Okra : 250 gms
salt :1 tsp
turmeric powder :1/4 tsp
red chilli powder :1 tsp
garam masala :1/2 tsp
oil :3 tsp
METHOD :
Wash and wipe the okra with a dry cloth,cut the top and keep a side.
Cut the okra length wise without removing the end.
Take a bowl,add salt,turmeric powder,chilli powder,garam masala,1/2 tsp oil and mix it well.
Add the above masala to the slit okra.
Heat oil in a pan,add the suffed okra to the pan and fry for 15 to 20 min on medium heat both sides.
serve with roti or rice.

Tindora fry (dondakaya fry)
INGREDIENTS :
Tindora (dondakaya) : 20
Onion : 2
Green peas : 2 tablespoons or optional
garlic crushed : 1
Red chilli powder : 1/2 spoon
Salt to taste
Dry coconut powder : 2 tea spoons
oil : 1 to 2 table spoon
Each pinch – turmeric,cumin seeds, mustard seeds .
curry leaves : few
METHOD :
( dondakaya) Tindoras cut in to lengthy pieces.
Cut onion in to thin lengthy pieces
In a wide skillet or kadai, heat oil. Add cumin seeds, mustard seeds and curry leaves and toast the popu.
Add onion and tindora pieces. Mix well and fry the pieces until they turn light brown color.
Add red chilli powder,garlic,salt and mix well. Saute for one minute.
Add coconut powder.
Turn off flame.
Garnish with coriander leaves.
Curry makes a great tasting side dish. Serve with roti or chapati and rice .

Turmeric : A pinch
Vegetable oil : 1 to 1 1/2 tablespoon
Mustard seeds, cumin seeds and curry leaves.
peanuts,cashewnuts (optional a few)
Preparation :
Heat oil in a pan, when the oil is hot add mustard seeds, cumin seeds ,green chillies and curry leaves and let it to crackle.
Add okra pieces and fry on low flame until the bendakaya pieces are completely soft and dry, reduce the flame.

Add peanuts or cashewnuts (optional) and fry for 1 min.
