MUSHROOM GRAVY CURRRY

INGREDIENTS :
Mushrooms           :1 packet
onion                     : 1
tomatoes                :2
red chilli powder   :1 tsp
ginger garlic paste  :1 tsp
garam masala          :1 tsp
coriander powder     :1 tsp
green chillies            :2
cumin                        :1/2 tsp
oil                              :3 tsp
cashew nuts               :1/2 cup
milk                            :1/4 cup(approx)
coriander leaves          :a few
METHOD  :
Cut the mushrooms and keep a side.
Take a bowl add milk to it and soak the cashew nuts in milk for 15 min. grind them into a fine paste and keep it a side.
Take tomatoes and grind them into a puree and keep a side.
Heat oil in a pan, add cumin,green chillies,chopped onion,ginger garlic paste to it and fry them until they turn golden brown color.
Add the tomato puree,cashew nuts paste,red chilli powder,coriander powder,garam masala,salt to it and let it cook for 5 min.
Now add the mushrooms to the curry and let it cook for 10 min until the mushrooms are cooked.
Turn off the heat and add some chopped coriander leaves to it.
Serve hot with rice or roti.

SORAKAYA PULUSU(BOTTLE GOUR GRAVY)

INGREDIENTS      :
  sorakaya(bottle gourd)     : 1/2
  sweet potato  :1
  onion             : 1
  ginger garlic paste  :1/2 tsp
  tamarind paste         :1 tsp
 green chillies            :2
 cumin                        :1/2 tsp
 mustard seeds            : 1/2 tsp
 oil                               :2 tsp
 curry leaves                : a few
 coriander leaves         : a few
 red chilli powder        :1/2 tsp
 salt                               : to taste

METHOD  :

Take a pan add oil,cumin,mustard seeds,green chillies,onions fry for 2 min.
Now add peeled and chopped bottle gourd,sweet potato,ginger garlic paste to it,let it cook for 10 min by covering with a lid.
Add red chilli powder,salt to it.
Now mix the tamarind paste with some water in a bowl and add it to the curry and let it cook for 10 min.
Spread the coriander leaves on top of it.
Serve hot with rice and some dal.

Egg Pulusu

 Ingredients  :

eggs :5
onion  : 3
red chilli powder : 1/2 tsp
Salt: to taste
Garam masala: 1/4 tsp
Coriander powder: 1/2 tsp
 garlic crushed     : 2
Tamarind: 1 big lemon size (If you want more gravy add some more tamarind)
turmeric: A pinch
tomatoes        :2
green chillies      :3
 oil: 2 table spoons
Cumin seeds: 1/4 tsp
Cilantro : to garnish (optional)
Curry leaves: few (Optional)

Method :

Hard boil eggs. Remove the shell, Pierce the eggs with knife and keep it aside (This will make eggs to absorb pulusu).
 Take a lemon size tamarind and soak in warm water and make the juice.
 In a wide bowl add oil and then add green chillies, cumin seeds, curry leaves. Once they pop add crushed garlic , onion and fry it well.Now add chopped tomatoes and let them cook for 5 min.
 Add red chilli powder, turmeric, garam masala powder, salt, tamarind juice and 3 cups of water, and boil for five minutes. Then add boiled eggs into the gravy and then close the bowl with lid and simmer about 5 to 10 minutes until it becomes thick. Stir occasionally to make sure the gravy does not stick to the pan.
 Turn off the heat. Garnish with coriander leaves.
